Antimicrobials in oxidized banana starch films: Effect on antibacterial activity, microstructure, mechanical and barrier properties

  • Water vapor permeability of banana oxidized starch films with 1.5% cinnamon essential oil decreased more than 300% compared to control film.

  • Banana starch films with cinnamon essential oil added showed the greatest inhibition with two strains tested.

  • Films with essential oil and those with sorbate show a significant decrease in tensile strength.

  • Film solubility increased approximately 90% with the addition of potassium sorbate.
